DIY gluten free chia seed crackers

Wow these crackers totally blew my mind! I had a friend tell me about how chia seeds could act as the “glue” for awesome crackers, so obviously I had to try and make my own. This recipe not only tastes amazing it is full of healthy fats, proteins, vitamins and minerals to keep you full and happy throughout the day.

(1) cup water
(¼) cup sunflower seeds
(¼) cup pumpkin seeds
(¼) cup sliced almonds
(¼) cup quinoa
(⅓) cup chia seeds
(⅓) cup LSA meal or ground flax seeds
(2) tbsp poppy seeds
(1) tbsp Italian herbs
(1) tsp salt

Preheat the oven to 220 degrees C
Mix all ingredients listed above in a medium sized bowl
Let the mixture of dry and wet ingredients sit for 20 minutes to bind
This is when the chia seeds work their magic
Place a sheet of baking paper on the cookie sheet to avoid the crackers from sticking
Spread the seed mixture on the baking sheet & paper
Note: using a cake icing knife helps to spread the mixture evenly
Note: try and get the mixture as thin as possible so the crackers get nice and crunchy
Bake the crackers for 15-20 minutes on the first side and 10-15 on the second side or until they are brown and crunchy
Note: it is important to watch the crackers as they bake as every oven is different!
