Chicken & Sweet Potato Skillet with Steamed Broccoli

What an easy and healthy dinner to please the whole family or just yourself? This is it! This recipe is for 1 serving size so you can conveniently multiply the recipe by the number of people you are feeding. Enjoy!

Ingredients:

(1) chicken breast (about 225 grams)

(1) medium orange sweet potato

(1) cup baby spinach

(½ ) Cup fresh or frozen broccoli

(1.5) tbsp of vegetable oil

(1) tsp salt

(1) tbsp paprika

1 tsp black pepper

(½ ) tsp onion powder

(½) tsp garlic powder

(3) cup water

Directions for Chicken & Sweet Potato:

  1. Preheat oven to 220 degrees C
  2. Cut sweet potato into 2.5cm cubes
  3. Bake sweet potato with ½ tsp vegetable oil (to prevent sticking) until tender (Usually 10-20 minutes)
  4. On a separate cutting space, cut chicken breast into 2.5cm cubes
  5. Heat 1 tbsp of vegetable oil in a pan on medium heat
  6. Add tender sweet potato, cubed chicken breast and seasonings to the hot pan with oil
  7. Cook on medium heat for 20-30 minutes, stirring occasionally
  8. Add baby spinach with 1-2 minutes left of cooking (just enough to make tender)
  9. Note: if the ingredient are sticking add 1-2 tbsp of water

Directions for Steamed Broccoli:

  1. If fresh wash broccoli & cut into bite size pieces  
  2. Boil ½ cup of water in a medium pot with a pinch of salt
  3. Once the water reaches a boil, add bite size pieces of broccoli
  4. Place the lid on the pot and reduce head to a simmer
  5. Let broccoli simmer until tender adding 1-2 tbsp of water as needed
